Toddler Friendly Protein Pancakes
Ingredients:
- 1 banana
- 3 eggs
- 1/3 cup buckwheat flour or chickpea flour (both are high protein and nutrient dense)
Optional Toppings:
- 1/4 cup berries
- Butter
- Maple syrup
Just 3 whole food ingredients and 1 minute in the blender, this recipe is not only gluten free but naturally high in protein! Buckwheat flour, eggs and bananas – that’s it!
So, why buckwheat?
It is a high protein seed which boasts all nine essential amino acids, making it a complete protein source!
100g of buckwheat flour contains 14 grams of protein and 10g of fibre!
It is rich in B1, B2, B3 and B6, as well as magnesium, iron, copper and zinc.
Eggs are another featured superfood, with 6g of protein in one egg and high amounts of choline ,which is vital to brain health and critical during pregnancy. They are also rich source of Vitamins A and D as well as B2, B5, B6, B12
Bananas are a major bonus. A whole food source of sweetness! No processed sugars needed, good source of potassium and tryptophan (a mood enhancer).
Did you know egg shells are an excellent source of calcium? So don’t fret if your toddler breaks a few shells into the blender

Process:
- Place all ingredients in a high-speed blender.
- Grease your pan with coconut oil or ghee and set the stove to medium heat.
- Pour the mix onto the pan and flip after the little bubbles appear.
- Repeat until you have cooked all your batter
