Star Anise Beef Prune Stew for Pregnancy

The most iron restoring and nourishing dish before birth and during recovery to aid in blood supply and boost iron levels. It is truly delicious! Star anise is a feature ingredient, it is known to treat microbial infections, regulate blood sugar, fight cancer, and improve heart health. Serve atop rice for a complete meal or enjoy a bowl on its one.

Serves: 4-6
Ingredients:
- 1 kg (2 lbs) grass fed beef chuck
- 5 tablespoons ghee
- 1/2 teaspoon sea salt and 1/2 teaspoon ground black pepper + more to taste
- 1 white onion roughly chopped
- 2-3 tablespoons tomato paste
- 1/4 teaspoon ground cinnamon
- 2 star anise pods
- 3 cups beef broth
- 2 tablespoons Bragg Coconut Aminos (or pure Tamari)
- 1 cup prunes, pitted
- 1 large knob of fresh ginger, sliced
Process***:
- Season beef with s&p
- Brown in a large heavy bottom pan on medium-high heat, on all sides, in 3-4 tablespoons ghee
- Once browned, set aside
- In the same pot add remaining ghee plus the onion and a little salt, let it brown for a few minutes
- Turn the heat down to low medium and add the remaining ingredients plus the beef
- Bring to a slow boil uncovered then reduce to a low simmer
- Cook for 2 hours, stirring occasionally.
- ***You can also add all ingredients to a slow cooker and cook low and slow.
- Season with s & p to taste
