Soft Slow Cooked Beef for the Whole Family
Cook Once, Eat Twice & Freeze
This simple yet nutrient dense slow cooked beef has the B vitamins, iron and choline to keep your family well all year long. It is a beautiful “set and forget” meal that allows busy mums to nourish their family without hours in the kitchen. Make it regularly and over time, make it your own. Sometimes I add 1/4 honey 1/4 coconut aminos and extra onions and skip the rosemary, for example. Note that babies should not have honey prior to 12 months of age.

Serves: 6-8
Ingredients:
- 1 kg or 2 lbs grass fed beef chuck
- 3 cups beef broth
- 1 cup filtered water
- 2 yellow/brown onions
- 6 to 8 garlic cloves; choose quantity based on your family preference or tolerance.
- 4 large carrots
- 1 sprig fresh rosemary or 2 thyme
Process:
- Add the beef chuck to the slow cook pot.
- Add one large or two normal diced brown/yellow onion
- Add 7-8 finely chopped cloves garlic
- Cut carrots lengthwise in half. A diagonal lengthwise slice makes it look fancy. Add the 4 quartered carrots to the slow cook pot
- Add 1 sprig rosemary or 2 thyme
- Cover all with 3 cups beef broth and 1/2 cup filtered water and a pinch of sea salt. You can add more salt and pepper later, to taste
- Cook low 7 hours
- While it’s cooking, make jasmine rice and serve the beef atop the rice (I like it in a bowl!). Or, add 4 Yukon gold potatoes to the pot for the nights you don’t want to make rice.
The best part is this can be adjusted in quantity to serve your family 2 nights! Cook once, eat twice for the win!
