Chewy Chocolate Chip Cookies

Ingredients:

  • 1 cup fine buckwheat flour
  • 1/2 cup maple syrup
  • 1/3 cup melted coconut oil
  • 2 tablespoons filtered water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • ¼-1/2 teaspoon sea salt
  • 1 teaspoon apple cider vinegar
  • ½ cup chocolate chips

Process:

  1. Preheat the oven to 350ºF or 175 C and line a large baking sheet with parchment paper. In a large bowl, stir together the almond flour, baking soda, and salt.
  2. Add in the melted coconut oil, maple syrup, vanilla, and vinegar, and mix again, until the dough looks consistent throughout 
  3. Fold in the chocolate chips, then use a tablespoon or 1-ounce cookie scoop to scoop the dough onto the prepared pan. 
  4. Flatten each ball of dough slightly and bake for 12 minutes, or until the edges look golden. 
  5. Let cool on the pan for 5-10 minutes before serving; they will firm up as they cool. Serve warm, or at room temperature.
