Crunchy Summery Cabbage Salad
This is the perfect food for your follicular and ovulation phases and a summer BBQ hit! The vibrant and crunchy purple cabbage is beautifully offset by the grounding black beans and sweet, tangy pineapple. I love to serve this alongside tacos or with my Slow Cooked Beef as it is the perfect contrast and allows me to serve slow cooker dishes all summer long. This one is a crowd pleaser, super easy and saves well!

Ingredients:
- 1/2 purple cabbage, cut in half then cut strips lengthwise
- 1/2 a pineapple, diced
- 1/2 can black beans, rinsed thoroughly if from a can
- 1 handful coriander / cilantro
- 1 lime juiced
Process:
- Add all ingredients to a large bowl, toss thoroughly with lime juice and let it sit at least 10 minutes to meld together
- Serve alongside tacos, slow cooked beef or another hearty, rich animal protein.
