Sophia’s Superfood Stir Fry
This is the number one dish I served my toddler for dinner from ages 2 to 4 years old. It is quick and easy to make so I made it nearly every week! It is family-friendly and provides the most nutrient-dense and dynamic leftovers. It is “superfood” because you can sneak organ meat or powdered beef liver into the grass fed beef mince for an incomparable boost of Vitamin A, B12 and Iron – 3 keys to immunity. Whilst my daughter was in preschool this recipe kept her well-nourished and healthy.
The best part is that it is flexible – use the veggies you have on hand or substitute in or out your child’s favourites or those you’d like them to begin eating. The coconut aminos give the dish a mild and slightly Asian sweet flavour toddlers love. The perfect balance of protein, fat, fibre and carbohydrates makes this a satisfying and blood sugar balancing meal so everyone gets a better night’s sleep. Use the leftovers for a satiating wrap the next day.

Serves: 4
Ingredients:
- 1 pound / 2Kg grass fed beef mince (ask your butcher to do 20% heart/liver/kidney and 80% beef for extra nutrients with no change in taste!)
- ¼ cup tamari or 1/4 coconut aminos for a sweeter flavour or 1/2 of each
- Generous dash of fish sauce
- 2 tablespoons ghee
- 1 yellow onion, diced
- 3 large garlic cloves, thinly sliced
- 1 head broccoli
- 1 large bok choy, cut into
- 1-inch pieces or 1 zucchini or 1 red bell pepper, whichever your children prefer
- 2 cups snow peas, ends removed, or 1 cup green peas
- 1-2 carrots chopped or shredded
- 2 cups cauliflower rice or 2 cups cooked jasmine rice of your preference, or a combo of the two
Process:
- Chop all veggies into appropriate kid sized/less than 1 inch pieces
- In a large pan, heat ghee
- Add onion and garlic and cook through until translucent
- Add the beef/organ meat mince mixture and cook through to light brown
- Add the chopped veggies and cook another 10 minutes
- Add tamari, coconut aminos and fish sauce as desired.
- Add cooked rice
- For a kid friendly plate, mix the rice and stir fry and serve warm
